The New American Menu: Why Emerging Ethnic Restaurant Chains Are the Next Billion-Dollar Growth Story

For more than 30 years, I've watched consumers migrate from one food trend to another. Tex-Mex became mainstream. Sushi moved from specialty restaurants into supermarket delis. Mediterranean cuisine evolved from a niche category into one of the fastest-growing segments in fast casual.

Today, another powerful undercurrent is reshaping the foodservice industry.

America isn't simply eating more "ethnic food." Consumers are embracing authentic global cuisines delivered through scalable restaurant chains, grocery prepared foods, meal kits, and convenience-driven formats. The result is one of the biggest shifts in restaurant development since the birth of fast casual.

As the Grocerant Guru®, I believe this migration is still in its early innings.

The next decade won't be dominated by another hamburger chain.

It will be defined by globally inspired brands that deliver authenticity, portability, affordability, digital convenience, and culinary discovery.

The Consumer Has Changed

Today's consumer expects more than convenience.

They want adventure without risk.

Social media has fundamentally changed how consumers discover food. TikTok, Instagram Reels, YouTube Shorts, and streaming travel shows have introduced millions of Americans to cuisines they had never previously experienced.

Instead of asking, "What is Korean food?"

Consumers now ask,

"Where's the best Korean fried chicken?"

That represents an extraordinary behavioral shift.

Generation Z and Millennials—now representing the largest purchasing cohorts in foodservice—grew up in multicultural communities and have become comfortable experimenting with Vietnamese pho, Japanese ramen, Filipino barbecue, Indian curries, Mediterranean bowls, Peruvian chicken, West African jollof rice, Caribbean jerk chicken, and regional Mexican specialties.

For them, global flavors are no longer exotic.

They're Tuesday night dinner.

The Numbers Tell the Story

The restaurant industry continues demonstrating remarkable resilience despite inflationary pressures.

According to Circana, Americans spent approximately $1 million every minute in restaurants during 2025. Restaurant spending increased roughly 3% year-over-year, even as overall restaurant traffic remained relatively flat, highlighting consumers' willingness to spend on concepts delivering differentiated value.

Technomic reports that the U.S. fast-casual segment generated nearly $77 billion in sales during 2025, increasing approximately 6%, outperforming much of the broader restaurant industry despite slower overall growth. Mediterranean and innovative sandwich concepts were among the strongest-performing categories.

No company better illustrates this trend than CAVA.

In fiscal 2025, CAVA reported:

·       Revenue exceeding $1.16 billion

·       22.5% annual revenue growth

·       72 net new restaurant openings

·       Same-restaurant sales growth of 4.0%

·       Restaurant-level margins of 24.4%

The momentum continued into 2026, with first-quarter revenue increasing more than 32%, same-restaurant sales climbing 9.7%, and guest traffic rising 6.8% year over year.

That's remarkable growth during an era when many traditional restaurant brands continue struggling to increase customer traffic.

The Next Generation of Ethnic Chains

Watch these cuisine segments carefully over the next five years:

·       Mediterranean

·       Korean BBQ and Korean fried chicken

·       Vietnamese

·       Filipino

·       Japanese ramen and hand rolls

·       Indian street food

·       Regional Mexican concepts

·       Peruvian rotisserie chicken

·       Caribbean cuisine

·       West African concepts

·       Middle Eastern street food

·       Hawaiian poke and island cuisine

Many of these brands are beginning exactly where Chipotle and Panera once started—regional expansion supported by highly loyal customers.

The difference?

Today's operators have digital ordering, AI-assisted labor management, sophisticated loyalty programs, third-party delivery, and social media providing nearly unlimited consumer awareness.

Grocery Retailers Are Following Their Lead

One of the biggest mistakes retailers can make is assuming these restaurant chains are competitors.

They're actually innovation laboratories.

Walk through progressive supermarket prepared food departments today and you'll increasingly find:

·       Korean fried chicken

·       Fresh sushi

·       Mediterranean grain bowls

·       Butter chicken

·       Chicken tikka masala

·       Pho

·       Birria tacos

·       Ramen

·       Poke bowls

·       Hummus bars

·       Fresh spring rolls

·       Globally inspired meal kits

Private-label international sauces, marinades, frozen entrées, spice blends, and ready-to-heat meals continue expanding as consumers recreate restaurant-quality experiences at home.

The restaurant and grocery industries are no longer operating in separate worlds.

They're sharing the same consumer.

Authenticity Is the New Competitive Advantage

Consumers increasingly reward brands that tell genuine cultural stories.

They want recipes rooted in heritage.

They appreciate regional ingredients.

They expect transparency.

Simply adding "Asian" or "Mediterranean" to a menu description no longer creates differentiation.

Consumers have become educated.

They know the difference between authentic and imitation.

Operators that respect culinary traditions while simplifying ordering, improving speed of service, and maintaining operational consistency will continue winning market share.

What Comes Next?

The next decade will likely produce national brands that many Americans have never heard of today.

Several will emerge from cuisines that remain underrepresented nationally.

Others will come from regional immigrant communities introducing authentic family recipes through scalable restaurant formats.

History suggests many of tomorrow's billion-dollar restaurant companies are currently operating fewer than 100 locations.

That's exactly where the next wave of disruption begins.

The real opportunity isn't simply serving ethnic food.

It's delivering authentic global flavors with convenience, customization, affordability, portability, and digital engagement.

That intersection is exactly where the future of the Grocerant resides.

Three Insights from the Grocerant Guru®

1. The definition of "American food" is changing. Tomorrow's mainstream menu will increasingly include Korean, Filipino, Indian, Vietnamese, Mediterranean, West African, and regional Latin American dishes as everyday meal solutions—not special-occasion dining.

2. Grocery retailers should embrace, not fear, emerging ethnic restaurant chains. The smartest retailers will translate restaurant innovation into fresh prepared foods, private-label offerings, meal kits, and grab-and-go solutions that satisfy consumers looking for authentic global flavors at home.

3. The next billion-dollar restaurant brands will likely emerge from today's regional ethnic concepts. Just as Chipotle transformed Mexican-inspired fast casual and CAVA elevated Mediterranean cuisine, the next generation of industry leaders will be those that successfully combine authentic cultural flavors with operational simplicity, digital convenience, and exceptional value. The winners won't just sell meals—they'll create memorable food experiences that consumers return to again and again.

7-Eleven Is Getting All Charged Up for the Next Generation of Customers

Looking a customer ahead is what good companies do.  It is one of the successes that Steven Johnson our Grocerant Guru® regularly discuses on this blog.  7-Eleven the world’s largest convenience store chain has picked up and shared more success clues than almost any other retail food chain.

Now 7‑Eleven Inc. is getting into the electric vehicle (EV) charging arena with its proprietary 7Charge network that is a big step-up in customer focus and a clue that they are looking a customer ahead.  While gasoline is not going away any time soon.  There will soon be a new generation of drivers that may never own a gasoline powered automobile.

So, 7-Eleven’s 7Charge is entering the market at select stores in Florida, Texas, Colorado and California. With the launch, 7‑Eleven intends to build one of the largest and most compatible EV fast-charging networks of any retailer in North America. Rollout will begin in the United States before making the jump to Canada.

The press release from 7-Eleven stated, the 7Charge network will offer EV drivers 7‑Eleven's trademark convenience and accessibility. 7Charge sites allow customers to charge any EV make and model compatible with common CHAdeMO or Combined Charging System plug types, and the 7Charge app offers a new level of convenience and coordination to customers looking for a seamless charging and payment experience.

So, the 7Charge app can be downloaded from the App Store or Google Play, or by visiting 7‑Eleven.com/7charge.

Joe DePinto, president and CEO at 7‑Eleven, stated, "For over 95 years, 7‑Eleven has innovated to meet our customers' needs — delivering convenience where, when and how they want it," said. "Now, we are innovating once again to meet our customers' where they are by expanding our business to provide EV drivers convenience of the future ... today."

This new 7Charge network will deliver on the growing consumer need for EV charging infrastructure. By expanding the 7Charge network, while continuing to utilize third-party fast-charging network options, 7‑Eleven will have the ability to grow its network to match consumer demand and make EV charging available to neighborhoods that have, until now, lacked access, the company said.

While it is still rolling out, once the network's expansion is complete, 7‑Eleven will have one of the largest and most compatible fast-charging networks of any retailer in North America serving communities and customers at charging stations across its entire family of brands including Speedway and Stripes stores.

Success does leave clues. One clue that time and time again continues to resurface is “the consumer is dynamic not static”.  Regular readers of this blog know that is the common refrain of Steven Johnson, Grocerant Guru® at Tacoma, WA based Foodservice Solutions®.  Our Grocerant Guru® can help your company edify your brand with relevance.  Call 253-759-7869 for more information

Burger King and Popeyes both begin Installing EV Charging Stations

That’s right, looking a customer ahead, Restaurant Brands Iberia (RB Iberia) is going to install 400 charging points for electric cars at almost 200 Burger King and Popeyes shops in Spain. Later, the cooperation could be extended to Portugal. Now that’s some new electricity.

According to a press release and news reports, “The Spanish energy supplier Iberdrola has reached an agreement with the company.  Steven Johnson, Grocerant Guru® at Tacoma, WA based Foodservice Solutions®, “Restaurant companies need to think like Amazon, everyday is ‘Day One’ Electric Vehicles are here.  It’s time to invite them and the owners into your restaurants.  There is no better welcome than having a EV charging unit available for them.”

Burger King and Popeyes will get a mix of DC chargers with 50 and 150 kW and AC chargers with 22 kW capacity is planned, according to the company. The new agreement is part of Iberdrola’s plan to build a total of 150,000 charging points by 2025, mainly in Spain. The exact distribution of DC and AC chargers is not clear from the announcement. However, with 400 charging points at 200 branches, it is likely that there will only be one charging point per car park with two charging points each – i.e. either AC or DC, probably not both.

Since this agreement that has now been concluded; it is exclusive for the next ten years, meaning that no charging points from other operators may be built at RB Iberia. Iberdrola will take over the installation and operation of the charging points. Customers will be able to use the chargers via the Iberdrola Public Charging App, which will also be used for billing.

According to the Iberdrola announcement, RB Iberia also plans to install up to 100 charging points per year at newly built restaurants. However, the possible expansion to Portugal in a second step is only mentioned in the communication and not backed up with exact targets.

Alfonso CalderĂ³n, commercial director of Iberdrola Spain, described RB Iberia as an “excellent ally to move forward in implementing solutions for the electrification of transport”. Are you looking a customer ahead?

How is your brand building new electricity? According to Johnson, “Brand relevance is in part driven with innovation in new menu related products in combination with new avenues of distribution all of which are the platform for the new electricity.”

Johnson stated “that in my minds-eye the new electricity must be very efficient for the supply and includes such things as fresh foods, music, developing brands, unique urban hemp clothing, grocerant positioning, EV Charging Stations fresh food messaging, autonomous delivery, cashier-less retail, plates, glasses, cash-less payments, digital hand-held marketing.

All retailers to survive the next generation of retail must embrace the artificial intelligence revolution while simultaneously embracing fresh food that is portable.

Don’t over reach. Are you ready for some fresh ideations? Do your food marketing ideations look more like yesterday than tomorrow? Chipotle’s Future is on Auto Pilot

The consumers is dynamic not static and companies must be as dynamic as their consumers according to Steven Johnson, Grocerant Guru® at Tacoma, WA based Foodservice Solutions® who stated “like it or not autonomous vehicles are on the way, adoption and migration might just be fast / sooner than any of expect.

That said Chipotle Mexican Grill has invested in a self-driving, robotic delivery company, by participating in a Series C funding round for Nuro, a Mountain View, Calif.-based company that was founded in 2016. Today, Nuro operates a robotic fleet of “on-road, occupant-less and autonomous vehicles to deliver everyday consumer goods,”. Clearly Chipotle is looking a customer ahead.

While the pandemic has accelerated digital usage and tech adoption at restaurants of all sizes. Chipotle saw its digital business grow 174% in 2020, compared to the prior year, with about half of those digital sales coming from delivery Chipotle is clearly looking for ways to reduce delivery cost.

In a statement Chipotle said, “The investment in Nuro is part of the chain’s exploration of “disruptive opportunities outside of traditional third-party partnerships,”

Curt Garner, Chipotle’s chief technology officer, stated, "We are always seeking opportunities that provide innovative solutions for increasing access and convenience for our guests,"… "Nuro could change the traditional delivery model and we believe consumers are going to continue to seek options and additional access points for how and where they enjoy their food."

The Chipotle’s investment in Nuro is the chain’s first “significant” backing of third-party technology company since Brian Niccol took over as CEO in 2018, the chain said. Customers never go backwards.  Chipotle is setting itself up to win in the future?  If you plan to be a ‘player’ you have to step-up to the plate according to Johnson.

So, late 2020, Nuro secured the first and only deployment permit from the California Department of Motor Vehicles, allowing the company’s driverless cars to operate commercially on roads in two counties near the Bay Area.   Are you looking a customer ahead taking dynamic steps or looking back and setting goals that look more like 2019?
