Restaurant Continue Closing so be it Out with the Old in with the New

 


Consumer discontent driven by Millennials and Gen Z consumers are digital natives in search of food discovery and are unsatisfied with what they are finding.  That does not mean different food, it means familiar food and beverage items with a twist.  That twist in many cases is where, how, and when they want to buy food and more often than not, they want grocerant niche Ready-2-Eat and Heat-N-Eat fresh prepared food according to Steven Johnson, Grocerant Guru® at Tacoma, WA based Foodservice Solutions®.

That’s not all, according to new research by Culinary Visions. “A recent study was inspired by restaurants that found inventive ways to food their communities, stay connected with their customers and keep their businesses alive.

More than half (53 percent) of consumers who participated in the study said they consider themselves to be a regular at their local restaurant. At the same time, 91 percent of respondents also say they enjoy cooking at home, keeping the pandemic-fueled enthusiasm for home cooking alive.

There is no reason this can't be a win-win for both consumers and savvy foodservice operators, as demonstrated by Kite String Cantina, located in Chicago.

Just two years into business when the pandemic hit in 2020, chef and co-owner Renee Ragin responded by creating the Kite Food Club, a chef-curated collection of restaurant prepared foods combined with bulk produce sourced from local farms. The program was a combination of meal kits and community supported agriculture that helped Kite Food Club stay in touch with its customers while strengthening their relationships.

As the pandemic continued, Kite Food Club's proprietors created a market inside their restaurant where customers could pick up meals and components, according to Culinary Visions. today, the marketplace is making room for more seats and the food club continues to evolve to meet the desires of customers at home and when they come into the restaurant.


"Restaurant operators have faced incredible challenges over the past two years. It is inspiring to see how some imaginative chefs and restaurateurs have been undaunted and created new ways of doing business to keep their customers engaged with them." said Sharon Olson, executive director of Culinary Visions. "It is especially gratifying to see that consumers who participated in this survey have responded so positively."

The Culinary Visions study found that consumers around the United States indicate that many of these programs continue to appeal to them today, a time when they have vastly more options available. Highlights from the study include:

Consumers enjoy food adventure — Two years of restrictions have not dampened consumers' desires to explore new foods and cuisines, as 76 percent of survey participants considered themselves to be adventurous eaters. This sense of adventures appeals both at home and in restaurants, with 84 saying they enjoy being creative with ingredients in the kitchen.

Chefs inspire trust — The idea of having a professional chef curate a box of groceries appealed to 71 percent of consumers, and 68 percent said they would enjoy a video tutorial from a local chef to accompany the ingredients in a home cooking kit that they put together. Creative collaboration between local restaurants and farmers is another welcome choice for the 72 percent who said they would be interested in a meal kit with ingredients put together by a restaurant chef and local farmers.

Global flavors appeal at home and dining out — International flavors continue to captivate American consumers and restaurants remain a perennial go-to for those looking for global culinary exploration. A recent survey on restaurant behavior shows that eight in 10 surveyed consumers said they enjoy international foods with flavors they cannot easily prepare at home. In Culinary Visions' latest survey, 76 percent said they like to order takeout from restaurants for things that are difficult to make at home. When cooking at home, prepared sauces or flavoring components make it easier for 68 percent of survey participants, bridging the gap between enjoyment and ease of preparation.”

Kroger Positioned Grocerant Ready-2-Eat or Heat-N-Eat Easter Meals for Today’s Consumers

 


Families, food, and fun are all top of mind when most people think about Easter. Families gathering around the table, telling tales, and taking photos are all apart as well. Then of course if you still have little ones around the house there is the Easter Egg Hunt. 

However according to Steven Johnson Grocerant Guru® at Tacoma, WA based Foodservice Solutions® cooking Easter dinner from scratch is not what most consumers are planning on.  In fact, recent grocerant scorecards found that only “35.7 percent of consumers were planning are cooking Easter Dinner from Scratch.”  The vast majority of consumers today will have an Easter table set with at minimum two grocerant niche Ready-2-Eat or Heat-N-Eat entrees or side dishes according to Johnson.

Kroger, is beginning to understand that and this year they are offering an Easter menu that can serve a family of 10 for less than $7.50 per person, while The Save Mart Cos. and The Fresh Market both have ready-made meals ripe for the picking.

So, Kroger’s suggested fresh menu includes a Kroger spiral ham, Private Selection macaroni and cheese, Simple Truth carrots, a Bakery Fresh peach pie and more. Sweet treats for Easter baskets are also included in the deal, and all gift card purchases will earn shoppers 4X Fuel Points for a limited time.


Stuart Aitken, SVP and chief merchant and marketing officer, stated, "At Kroger, we offer lower prices and more choices every day," …. "We promise our customers a zero-compromise Easter meal that is delicious and made affordable by our everyday low prices. Kroger is Fresh for Everyone no matter the day, year or holiday. This Easter is better than inflation free with the consistent value and savings we offer our customers every day, and we'll even take care of planning with an incredible family meal."

Kroger is not alone as Save Mart and Lucky shoppers, meanwhile, can get a $24.99 “Dinner for Two” that includes ham or tri-tip and two sides. A “Complete Ham Meal” or “Complete Turkey Meal” costs $59.99, serves six to eight people, and includes several side items. Dessert deals are also available, as well as tulips and potted Easter lilies.

Donovan Ford, SVP, store operations at Save Mart, stated, “Easter is a special time for families in the communities we serve, whether it’s a dinner for two or meals for larger gatherings, Save Mart and Lucky stores provide the traditional food and spring florals they look forward to and enjoy each year.”

The Fresh Market has grocerant Ready-2-Eat and Heat-N-Eat prepared meals as well that include ham, lamb, prime rib and brunch options ranging from $25 to $99.99. The grocer is also offering a variety of Easter-themed chocolates, cookies, candy, flowers and more.

Walmart also has Easter-ready items on sale through April 15, including Sam’s Choice spiral-cut ham, canned green beans and corn, salad dressings and more. Additionally, Target has more than 200 seasonal treats available for under $5, and is offering 30 new seasonal sweets and snacks from its private-label Favorite Day brand.


This is a big holiday for restaurants and grocery stores as Data from Numerator, a Chicago-based data and tech company, reveals that 85% of consumers plan to celebrate Easter this year. Also, according to the Washington, D.C.-based National Retail Federation (NRF), Easter spending is expected to reach a record $24 billion this year, a $3.2 billion increase from 2022. White Castle is Focusing on Brand Customer Adoption and Migration

The $27 million expansion, completed in October 2022, effectively doubled the size of the plant to approximately 150,000 square feet and also doubled its production capacity. Fed by White Castle’s own bakery and meat processing facilities, the newly expanded retail plant delivers the very same one-of-a-kind taste to frozen food aisles that can be found in White Castle restaurants.
