Foodservice Display Kitchens Invite Customer Participation

There is an increasing commonality of success developing within the foodservice sector driven by Millennials according to Foodservice Solutions® Grocerant Guru® Steven Johnson.  One of the most customer friendly inviting commonalities is display kitchens where customers can not only ‘see’ the food being prepared but in most cases order it customized into a personal meal or meal component.
Johnson’s research focused on the grocerant niche found that “millennial shoppers, in particular, seeking to be more involved with food, seeking discovery of flavors, while showing a preference for meal assembly over cooking from scratch.”
In a new report from the International Dairy-Deli-Bakery Association’s 2015 “Culinary Concierge: Engaging Millennials Through Meals the IDDBA found “Millennials are seeking robust in-store experiences that allow them to see and interact with deli personnel as they have the time, need and desire … In-store chefs can be the go-to people for recipe ideas and culinary inspiration,”
IDDBA’s report also observed that millennials enjoy “engaging in food theater” when time permits, which may include watching their fresh food being prepared by an in-store chef or exchanges varying from “How was your day?” to “How do I prepare this salmon?” Discover is a valued commodity for millennials as according to our own Grocerant Guru®.
Foodservice Solutions® team has found that for millennials how to prepare food does not mean cook from scratch.  In fact in a 2016 survey Foodservice Solutions® found that 84.6% of meals prepared for dinner had at least one item that was either a Ready-2-Eat or Heat-N-Eat fresh prepared item.
